1. Banana Bread

Ingredients

  • 210 g cassava flour
  • 280 g ripe bananas, mashed
  • 100 g maple syrup or honey
  • 85 g coconut or sunflower oil
  • 3 eggs
  • 45 g milk or plant milk
  • 10 g vanilla extract
  • 5 g baking soda
  • 3 g sea salt
  • 1 g cinnamon

Method

  1. Preheat oven to 190°C.
  2. Mix flour, baking soda, salt and cinnamon.
  3. In another bowl whisk bananas, syrup, oil, eggs, milk and vanilla.
  4. Combine wet and dry ingredients gently.
  5. Pour into a loaf tin and bake 35–45 minutes.

2. Cassava Pancakes

Ingredients

  • 120 g cassava flour
  • 2 eggs
  • 240 ml milk or plant milk
  • 1 tbsp honey or maple syrup
  • 1 tsp baking powder
  • ½ tsp vanilla extract
  • Pinch sea salt

Method

  1. Whisk all ingredients until smooth.
  2. Heat a lightly oiled pan on medium heat.
  3. Pour small portions of batter and cook 2–3 minutes per side.
  4. Serve warm with fruit or honey.

3. Soft Cassava Rotis

Ingredients

  • 150 g cassava flour
  • 120 ml warm water
  • ½ tsp sea salt
  • 1 tsp oil or ghee

Method

  1. Mix flour and salt. Add warm water gradually to form a soft dough.
  2. Rest dough 10 minutes.
  3. Divide into small balls and roll thin.
  4. Cook on a hot pan 1–2 minutes per side until lightly golden.
